De Bortoli practice high input viticulture with a huge emphasis on site selection and the use of mature vines. This approach has enable them to produce, among many others, the great sweet wine Noble One. The same care is applied to this entry level Chardonnay. Carefully selected yeast gives this wine a creamy texture with flavours of peach and nectarine and just the slightest hint of vanilla. The creamy texture is balanced by fine acidity. This is best enjoyed with a creamy fish pie.
